  • 2-3 cans of pinto beans
  • tacos or tortilla chips (your choice of grain)
  • green bell pepper
  • red bell pepper
  • yellow onion
  • 2 medium tomatoes
  • 1 large avocado
  • 1/2 cup of pineapple chunks (drained, if canned)
  • grated cheddar vegan cheese


Boil pinto beans until consistency issyrupy. After beans have cooked, mix onmedium with a hand mixer for 1-2minutes.

While beans are boiling, chop and dicepeppers, onions, and tomatoes. Mix inlarge bowl. Add avocado gratedvegan cheese. Mix avocadothoroughly with pepper, tomato, andonion. Add dry pineapple.

Beans and avocado mix are two layers onthe taco, or if using tortilla chips,cover chips.
