Additional information: Variation:
Substitute 1-1/2 cups broccoli florets for the celery and 1 cup quartered mushrooms for the carrots. Or you may wish to use these vegetables in addition to the celery and carrots.Enjoy!!!


  • 3 medium potatoes, 1/4 inch cubes, with skin
  • 1 large onion, small dice
  • 2 medium tomatoes, small dice
  • 2 tablespoon lemon juice
  • cayenne to taste
  • salt and pepper to taste
  • olive oil


Heat Olive oil in heavy skillet or saucepan.

Dice potatoes and start to saute overmedium-high heat. Don't stir much. Justturn over once or twice to brown all sides

While potatoes cook, cut up onion.Add onion to potatoes and stir once ortwice.

While that cooks, dice up tomatoes.Add tomatoes to the pan. Stir a bit.Add lemon juice, cayenne, salt and pepper.

Stir. Cover and cook a bit untilpotatoes done to your taste. Adjustseasoning.

(good add-ins: cumin, garlic,veggie sausage)

Eat by scooping with bits of pita bread.
