  • 1 pound firm tofu
  • 1/2 cup favorite BBQ sauce
  • 1/2 cup orange juice
  • 1/2 cup vegan maple syrup (cheap versions work, too)
  • 1 teaspoon ground black pepper
  • nonstick cooking spray or some vegan margarine

Find the biggest plate or platter thatwill fit in your microwave, and sprayit with nonstick cooking spray orgrease it with vegan margarine.

Use frozen and defrosted tofu to getthe best texture. Cut it into 1/4 inchslabs and squeeze all the moisture outof it between two plates. In a bowl, whisk together the BBQ sauce, orange juice, vegan maple syrup and pepper.

Pour half of the sauce mixture ontothe greased plate and then arrange thetofu slices on it to get the leastamount of overlapping pieces. Pour therest of the sauce on the top and popinto a microwave.

Microwave on "high" for 10 minutes.Sauce may splatter on the inside ofthe microwave. After 10 minutes, letthe Tofu rest for 5 minutes, and checkthe texture. It should be hard aroundthe edges and very firm in the middle. If so, dig in. It tastes even betterwhen cold. If not, microwave in 3minute increments until desiredconsistency.

This tofu also tastes great on acharcoal BBQ, but make sure the grillis greased to avoid sticking.

Even meat eaters enjoy this onebecause the texture is so close to thereal thing. My Dog is crazy for it.Also tastes great stuffed into asandwich with pickles and extra sauceand some vegan coleslaw on the side.

Now that's good eatin'! ;)
