  • 1 1/2 teaspoon Grated or ground ginger
  • 1/4 cup vegan rice wine vinegar
  • 3 tablespoon canola oil
  • 1 teaspoon sesame oil or tahini
  • 2 tablespoon soy sauce or tamari
  • 2 tablespoon vegan brown sugar
  • 2 cloves garlic, pressed or minced
  • juice of one lemon
  • 1/2 teaspoon Red pepper flakes
  • 1/4 cup chopped cilantro


  • portabello mushrooms
  • sandwich vegan bread
  • olive oil
  • balsamic vinegar
  • optional: rosemary, thyme, garlic, alfalfa sprouts, vegan mustard


1. Mix 2 parts olive oil with 1 part balsamic vinegar in a small bowl.2. Optional: Add rosemary, thyme, and/or garlic to taste.3. Marinade the portabello mushrooms for just a few seconds in the mix.4. Put the mushrooms in a pan and fry them as fried as you'd like them to be.5. Make sandwiches! It's great on toasted wheat vegan bread with alfalfa sprouts and dijon mustard. Everything in this recipe is done to taste, so that's why it's all so idefinite. Enjoy!
